I know what you’re thinking: what does cereal have to do with a backyard blast? I thought the same thing at first, but then I saw the Post Recipes. I had no idea that cereal was so diverse! For example, the site lists dozens of recipes using Honey Bunches of Oats, including a delicious Grilled Pineapple Tart using the cereal as the crust. Honey Nut Shredded Wheat can also be used in a number of recipes, from crusted chicken to peanut butter snack bars.

I received a box of each cereal to try, and while I usually just eat it plain with milk, I decided to try a few recipes. My favorite is the Crunchy Chicken Dippers.  My camera fritzed and I didn’t realize all the pics were blurry until it was too late. I’m not exactly brilliant when it comes to photographing food.

Crunchy Chicken Dippers made with Honey Bunches of Oats

Ingredients:

  • 2 eggs
  • 2 lb. boneless skinless chicken breasts, cut into 1-inch wide strips
  • 4-1/2 cups Honey Bunches of Oats Cereal, finely crushed
  • 1 cup barbecue sauce, honey mustard, or whatever else you like to dip your chicken strips in.

PREHEAT your oven to 375°F. Spray two 15x10x1-inch baking pans with cooking spray. Beat the eggs together in a shallow dish. Using a tong  (I’m weird about touching raw chicken), pick up each piece and dip it in the egg.  Dip the egg-coated chicken into the cereal, and be sure to coat it well. Line them up in the pans. BAKE 25 min. or until the chicken is cooked properly. Dip it in your dipping sauce of choice. I prefer Honey Mustard, which goes pretty well with the Honey Nut flavor.

The end result makes a whopping 8 servings, each with about 280 calories. The cereal makes them rich in iron and other nutrients. I think they’re crunchier than regular breaded strips, which makes for a nice change. These would be great for a picnic or backyard party. Post has tons of other recipes for all their cereals, and in many cases they’re under 200 calories per serving. It’s definitely time to start letting my cereal think outside the box! Sorry, that was really cheesy, wasn’t it? I get that from my grandfather, he was a huge fan of puns.
