What is No Churn Ice Cream?

Like I said, a lot of these yummy ice cream recipes are “no churn.” What does that mean? I wasn’t entirely sure myself, so I looked it up…and found no real definition.

For the most part, no churn ice cream uses two main ingredients- heavy whipping cream and condensed milk- plus whatever else you want to throw in there. However, as you saw above, some no churn recipes swapped out one or both of those ingredients.

According to the Pioneer Woman, no churn ice cream is about as close to instant ice cream as you can get. It only takes about 4-5 hours to freeze, versus 1-2 days with the churning method. Yes, you could make it even faster with an electric ice cream maker, but even though I have one, there’s one major issue: I never have enough space in my freezer for the large canister.

With no churn homemade ice cream, you have more wiggle room (literally) because you can put it in pretty much any container. Plus, if you don’t already have an ice cream maker, you don’t have to go out and buy one.

What do you need to make your own ice cream?

So, if you don’t need an ice cream maker, what DO you need (aside from the ingredients)? That depends on who you ask, but since you’re asking me, read on for my recommendations. Check out the table for a quick look, then read on to find out why I recommend them.

1. A glass mixing bowl

A glass mixing bowl is always better than a plastic one because it doesn’t absorb the odors (and then transfer them to other foods). Plus, if you’re making ice cream with bright fruits, you don’t have to worry about staining the bowl.

I like Pyrex mixing bowls because they’re relatively inexpensive and they hold up very well. Plus, they’re pretty much everything-safe, which means you can mix your ice cream and freeze it in the same bowl if you wanted to.

2. A metal container (like metal bread loaf pan)

While you could freeze your ice cream in the glass bowl, if you’re short on space like I always am, a metal loaf pan works a bit better. Just make sure you pre-freeze it before you add your ice cream for the best results. AmazonBasics makes a nice inexpensive set.

3. Handheld Mixer

Sure, you could get away with just using a manual mixer (or heck, probably even a spoon), but a handheld mixer makes the job a whole lot easier! If you want something that’s really built-to-last, grab yourself a KitchenAid. It’s worth the extra money since you can use it for all your mixing needs.

4. Ice Cream Bowls

Not really a necessity, but still nice to have! I just have regular ceramic bowls right now, but I’m considering these stainless steel bowls. They’re eco-friendly and easier to clean.

5. Ice Cream Scooper

Again, not a necessity, but a good ice cream scooper makes getting your ice cream out of the container a whole lot easier. I’ve had this Good Cook scoop for a few years now and I love it. I get perfectly round scoops every time!
