Nothing goes better with summer than chilling in your backyard with good friends and yummy food. I eat a lot of chicken during the summer because beef and pork are pretty much out for me, but I can only go for barbecue marinade so many times before I get tired of it. I’ve never really tried spice rubs before, but when I came across Knox’s Spice Co., I was intrigued right away. I’m a total cooking fiasco usually, but they have recipes with just three ingredients!
About Knox’s Spice Co.: Small Business, Big Flavor
The company was founded by two brothers, Tim and Bryan Knox, who enjoyed a friendly rivalry of “who can come up with the better recipe.” Eventually, they decided to end their light-hearted “feud” and join forces. The BBQ world is a better place because of it! The currently have six different delicious rubs, including: Chipotle BBQ, Cracked Pepper, Jamaican Jerk, Yummy Chicken and two salt free seasonings Sabroso and Barabicu. All of the rubs are made with only the best, all-natural ingredients. Each generously sized glass jar is only $5, so you don’t pay a fortune for quality with them.
Trying Out the Rubs
I received all six of the BBQ rubs, and had a chance to try out two of them so far. I’m looking forward to trying out all of them as soon as possible based on what I tasted! We made two recipes out of the included recipe pamphlet, except I changed the potato one a bit to incorporate another rub.
We made chicken with the Yummy Chicken Rub and potato wedges with the Baribicu rub. The recipes are super simple. For the chicken, just dip chicken breasts into olive oil and sprinkle on the Yummy Chicken Dry Rub. Bake for 25 minutes at 375 degrees, let sit for ten minutes after baking, and enjoy. The Yummy Chicken rub is awesome, with just the right amount of spiciness. It’s a combination of thyme, rosemary, basil, sage, garlic, onion and a tad of cracked black pepper. It definitely lives up to its name!
The Potato Wedges were equally simple. If you want to save time, you could theoretically go with store-bought frozen steak fries. We wanted to go all out though, so we sliced potatoes into thick wedges, covered them with olive oil, then sprinkled on the Baribicu rub. Baribicu is a little spicier than the Yummy Chicken, with a nice kick. Still, it wasn’t so hot that I needed to down water or anything. It’s a Caribbean style spice blend, and reminded me of the cruise I took a couple of years ago.
If you’re tired of the same old chicken, beef, or pork marinades and want something a little more exciting, I highly recommend Knox’s Dry Rubs.
