Last night, I was really craving something chocolately, but I didn’t feel like running to the store to grab something. I found a site, SuperCook, that lets you plug in the ingredients you have on hand, and it returns a list of everything you can make with those ingredients.
I had cocoa powder, flour, sugar, and eggs, but since I’m not exactly much of a creative cook, I had no idea what I could do with them. One of the recipes that came up was from for Chocolate Brownie Cookies from RecipeZaar. I changed it a bit to make it a little sweeter, and I’m actually pretty proud that my slight modifications went over well, considering I’ve never improvised much before on a recipe.
Ingredients:
- 2 cups flour
- 2.5 cups sugar
- 1 cup melted butter
- 3 large eggs
- 1/2 cup cocoa powder
- 1/4 teaspoon vanilla
- Preheat oven to 375.
- Grease cookie sheets.
- Mix all ingredients in a medium-sized metal mixing bowl until well-blended
- Drop batter onto greased cookie sheet by teaspoonfuls.
- Bake 8-10 minutes.
- Remove with a metal spatula and allow cookies to cool before transferring them to container.
Makes about 4 dozen cookies, depending on how big you make them.
Yum! They look so good, and I love how they are a cookie with brownie flavor. That would make it convenient to take for lunch or a potluck (no cutting, spatulas, etc.)
These look delicious! Is there anything I can substitute the cocoa for? That’s one thing I never seem to have on hand…otherwise I’ll just have to pick some up so I can try the recipe!
Oddly enough, I started my search with just cocoa powder, since that was the one thing I knew I did have on hand! Not sure what else you could sub with. They’re definitely worth trying though, so grab some cocoa powder when you’re out!
