Easter and eggs have gone hand-in-hand for a long time. I have no idea where the tradition started. I could look it up, but after the busy last week I had, I’m feeling a little lazy! They’re a perfect pair though, and that’s really all I need to know right now. Egglands Best gave me all the tools I needed to host an egg brunch, and I thought the perfect time to do that would be at the Easter gathering at Sal’s house. This was especially a good idea since I am a terrible cook and Sal’s mom is an Italian genius in the kitchen.
What’s on the Table?
Sal’s mom makes these amazing cookies, and she agreed to use Eggland’s Best eggs this time around, so I gave her my coupon to try them out. I have no idea what the cookies are called, and they’re some sort of family recipe, so I can’t help you much with making them, but they’re freaking awesome. I love dunking them in coffee. They’re an Italian cookie of some sort, almost like a cross between shortbread and biscotti, but with a softer texture.
Every Easter, she also makes another version of the cookie, but wrapped around a hard-boiled egg left in the shell, like a little basket. These are so pretty! They taste pretty delicious too. You kind of get to eat your dessert first, since you have to eat the cookie part to get to the egg. I suppose you could break it apart, eat the egg first, then the cookie, but where is the fun in that?
Since Sal’s mom was cooking a plethora of dishes for the actual Easter meal, the cookies were served as a brunch snack, a prelude to the desserts that were rolled out after the meal. Not a good day to be on a diet!
What Makes Eggland’s Best the Best?
Ever wonder what makes Eggland’s Best eggs so special? I know I did. I mean, eggs are eggs, right? Apparently not! Eggland’s Best eggs have a whopping 10 times the amount of Vitamin E in their eggs, and double the amount of omega-3’s than the ordinary egg. They also have more vitamin D and B12. All that goodness with 25% less saturated fat definitely makes them earn their moniker of Eggland’s Best.
