Creamy Garlic Parmesan Pasta Recipe: My Idea of the Perfect Potato Chip Flavor

Being a work-at-home mom is tough! I love it and wouldn’t change it for anything, but between caring for my son and working 10+ hour days at the computer, I feel like I rarely have any “me” time. When I do get down time, I spend it looking for ways to maximize my “up” time! Looking for new post ideas, networking, etc. It really gets to the point where I have to literally force myself to settle down and take a breather. I’ve finally got myself trained to take time out from 9:30pm until bedtime. That is MY time! What do I do with my time? Either read or watch TV.

At night when I’m having my me time, I love eating Lay’s potato chips. My family has been what I call a Lay’s loyalist since I was a kid. The yellow and white bag has become iconic to me, a symbol of my childhood. While I enjoy plain Lay’s with sandwiches, I also like to mix it up. I was a total chocolate-covered potato chip hipster, whipping them up in my kitchen with friends as a teenager. Back then, everyone said “ewww!” Well, now Lay’s is coming out with their own chocolate-covered chips, so phooey on the naysayers! When I didn’t have time to make my own batch, I’d just mix Lay’s Original chips together with chocolate chips in a bowl and try to get a little of each in every bite.

Lays Do Us a Flavor

Lay’s is having this super cool contest call Do Us a Flavor. Check out the rules for full details, but the gist of it is this: fans of Lay’s submit their ideas for the next great Lay’s potato chip flavor. A judging panel made up of chefs and other foodies narrow down the submissions to four flavors. Then we all have a chance to vote for the winner. That winner receives a whopping $1 million grand prize. Pretty sweet, right?

There are already some really interesting flavors up over at the contest page, but I’m going to try my hand at one of my own! A couple of months ago, we were pretty low on actual food and totally snowed in. My mom decided to whip up something she found online, changing it around a bit to make use of what we had on hands. The result was an amazing creamy garlic Parmesan pasta that I feel would make the perfect chip flavor. Check out her recipe!

Creamy Garlic Parmesan Pasta with Chicken

Ingredients:

  • 1 lb pasta cooked and drained (we used thick spaghetti, you can use whatever you have on hand)
  • 2 tbsp. butter or margarine
  • 2 minced garlic cloves
  • 2 tbsp. all-purpose flour
  • 3/4 cup chicken broth
  • 3/4 cup milk (we use 1%)
  • 2 tsp. parsley flakes
  • 1/2 cup Parmesan/Romano Cheese (we used Parmesan with Basil and Oregano mixed in)

Directions:

  • Melt the butter in a medium sauce pan.
  • Add the garlic to the butter and cook for one minute.
  • Add flour and continue to cook another minute while stirring.
  • Add the cheese and parsley
  • Stir until combined.
  • Toss into the hot pasta and serve.

 

 

Depending on your appetite, you can either make this as a main dish or serve it with breaded chicken. It’s so easy to make and delicious too! Don’t you think Creamy Garlic Parmesan sounds like a delicious Lay’s chip flavor?
