Parfaits are one of my favorite ways to enjoy summer berries. They work as both a healthier dessert option or as a tasty alternative to plain cereal for breakfast. The best parfaits include yogurt, strawberries, blueberries and granola.
This particular recipe kicks it up a notch by using Quaker Quaker® Real Medleys® SuperGrains Blueberry Pecan Granola. It’s insanely easy to make and tastes so good, you won’t even realize that it’s better for you than, say, that ice-cream sundae you’ve been craving!
Strawberry & Blueberry Pecan Yogurt Parfait

Ingredients:
- Sliced strawberries
- Blueberries
- Lowfat Vanilla Yogurt
- Quaker® Real Medleys® SuperGrains Granola
- Optional: Angel Food Cake sliced into little squares
How to make:
Starting at the bottom of your dish, layer the ingredients in this order: yogurt, blueberries, yogurt, granola, strawberries, granola, repeat. Once you get to the top, add a few more blueberries and strawberry slices, then sprinkle with granola.
Enjoy! If you opt to add in the angel food cake, start with a square on the bottom, then a square in between every third layer. If you want to turn this into a sweeter BBQ dessert recipe, you can also swap out the yogurt with a low-fat vanilla pudding. I might try that next. Oooh, or maybe banana pudding?
The Quaker®Real Medleys® SuperGrains Granola really add a fantastic crunch to it. It’s super hearty, with nice big clusters of seven different grains, pecans and little bits of fruit. It also comes in Cinnamon Apple Walnut flavor, but I didn’t think that would go well with the parfait. I’m thinking of trying that on baked apples though. Sounds good, right? Each 1/2 cup of either flavor is packed full of fiber and Omega-3s.
If you’re more of a hot cereal eater, I highly recommend trying SuperGrains Instant Hot Cereal. It’s made with a blend of oats, barley, rye, flax and my personal favorite, quinoa. It’s my favorite oatmeal right now, especially the Honey Almond flavor. I like my oatmeal to be nice and hearty, not all thin and runny. SuperGrains is exactly that, thick and delicious. It’s packed with 7 grams of protein and 5 grams of fiber per serving, which is important to me because I am such a picky eater.
Both are available in grocery stores nationwide in the breakfast section.

Another power breakfast idea! I love that it has two of my favorite berries! The yogurt and oatmeal is already packed with healthy goodness, and the fruit would make it more enjoyable.
