What is No Churn Ice Cream?
Like I said, a lot of these yummy ice cream recipes are “no churn.” What does that mean? I wasn’t entirely sure myself, so I looked it up…and found no real definition.
For the most part, no churn ice cream uses two main ingredients- heavy whipping cream and condensed milk- plus whatever else you want to throw in there. However, as you saw above, some no churn recipes swapped out one or both of those ingredients.
According to the Pioneer Woman, no churn ice cream is about as close to instant ice cream as you can get. It only takes about 4-5 hours to freeze, versus 1-2 days with the churning method. Yes, you could make it even faster with an electric ice cream maker, but even though I have one, there’s one major issue: I never have enough space in my freezer for the large canister.
With no churn homemade ice cream, you have more wiggle room (literally) because you can put it in pretty much any container. Plus, if you don’t already have an ice cream maker, you don’t have to go out and buy one.
If you are considering getting one, though, this one has great reviews and it’s budget-friendly:
- SUPERIOR FUNCTION: The new patent-pending mixing paddle makes frozen treats in 20 minutes or less
- COOL FEATURE: Double-insulated freezer bowl eliminates the need for ice
- CAPACITY: Makes up to 1-½-quarts of your favorite ice cream or frozen yogurt
- EASY TO USE: Easy lock transparent lid with large spout makes adding ingredients simple and mess free
- LIMITED 3-YEAR WARRANTY: Refer to user manual for troubleshooting steps and questions surrounding warranty policies – this product is BPA free
What do you need to make your own ice cream?
So, if you don’t need an ice cream maker, what DO you need (aside from the ingredients)? That depends on who you ask, but since you’re asking me, read on for my recommendations. Check out the table for a quick look, then read on to find out why I recommend them.
1. A glass mixing bowl
A glass mixing bowl is always better than a plastic one because it doesn’t absorb the odors (and then transfer them to other foods). Plus, if you’re making ice cream with bright fruits, you don’t have to worry about staining the bowl.
I like Pyrex mixing bowls because they’re relatively inexpensive and they hold up very well. Plus, they’re pretty much everything-safe, which means you can mix your ice cream and freeze it in the same bowl if you wanted to.
- 3-PIECE: Set includes 1-qt, 1.5-qt, and 2.5-qt round glass bowls. This is the perfect set for all manners of prepping, baking and home entertainment.
- EVERYDAY USE: High-quality tempered glass gives you a peace of mind when managing your food, resists stains and odors. Worry less about scrubbing hard to get rid of stains or any funny smells.
- LOW MAINTENANCE: These glass bowls are freezer, microwave, and dishwasher safe. No need to hold back when warming your food or storing your leftovers for tomorrow.
- LIMITED WARRANTY: This item has a limited warranty.
- A TRUSTED BRAND: Loved for generations, experienced cooks and beginners alike have reached for Pyrex brand glassware products, because they’re affordable, durable, and great for all their cooking, serving and storing needs.
2. A metal container (like metal bread loaf pan)
While you could freeze your ice cream in the glass bowl, if you’re short on space like I always am, a metal loaf pan works a bit better. Just make sure you pre-freeze it before you add your ice cream for the best results. AmazonBasics makes a nice inexpensive set.
- Set of 2 rectangular-shaped loaf pans; ideal for baking bread, pound cake, meatloaf, and more
- Heavy-weight steel construction provides durability and fast, even heating for uniform browning
- Nonstick coating helps with effortless food release; oven-safe to 428 degrees F
- Hand washing recommended
- Part of the Amazon Basics nonstick bakeware collection
- Dimensions: Outer: 10.6 x 6 x 2.8 inches; Inner: 9.5 x 5 inches
- Never use under a grill
- Made without PFAS
3. Handheld Mixer
Sure, you could get away with just using a manual mixer (or heck, probably even a spoon), but a handheld mixer makes the job a whole lot easier! If you want something that’s really built-to-last, grab yourself a KitchenAid. It’s worth the extra money since you can use it for all your mixing needs.
- #1 MIXER BRAND IN THE WORLD* *Source: Euromonitor International Ltd. for retail sales revenue, USD, all retail channels. More information, including date ranges available at: mixerclaim.kitchenaid.com
- This hand mixer has the right speed for the task at hand, from mixing in nuts & chocolate chips at speed 1, to whipping meringues at speed 7.
- Pro whisk attachment for light and fluffy mixtures - easily whip egg whites to fluffy peaks or heavy cream to whipping cream to top your favorite desserts, dishwasher-safe
- Lockable swivel cord keeps the cord out of your way while mixing
- Quickly remove any of the included accessories from the hand mixer with the single-handed press of the button
4. Ice Cream Bowls
Not really a necessity, but still nice to have! I just have regular ceramic bowls right now, but I’m considering these stainless steel bowls. They’re eco-friendly and easier to clean.
5. Ice Cream Scooper
Again, not a necessity, but a good ice cream scooper makes getting your ice cream out of the container a whole lot easier. I’ve had this Good Cook scoop for a few years now and I love it. I get perfectly round scoops every time!
- 12" FRYING PAN: Inspired by Italian style and design and is ideal for a variety of cooking applications, from searing steaks and chicken to sautéing vegetables and simmering sauces
- MADE WITH DURABLE PORCELAIN ENAMEL AND CERAMIC: Brilliant red porcelain enamel exterior with sleek white ceramic interior heats to higher temperatures for better searing and professional-quality results
- TITANIUM-INFUSED NONSTICK CERAMIC SURFACE: Eco-friendly titanium-infused ceramic coating is PTFE, PFOA, and cadmium-free to provide excellent release and make clean up easy
- STAY-COOL HANDLE AND LID: Riveted silicone handle is heat-resistant and stays cool for a comfortable and secure grip during cooking, and the clear tempered glass lid allows you to see into the pan while still keeping food covered

I love making homemade ice cream because it tastes so much better than the stores. Even though it is more expensive, it is worth it. I want to try making some of these ice creams with the kids!
Thank you!
This will work great, with my ZUKO no-churn ice cream maker, that bought from Amazon. They have a recipe book, too, but not as many recipes.
this is an informative post and it is very beneficial and knowledgeable.
I adore ice cream. These varieties, like blueberry pie and cherry banana, look fantastic.
